This document is an explanation of the following key points:
• Microbiological testing can never guarantee food safety
• One monthly Listeria species (L. spp.) test result may only represent 0.000062% of production 
• No product should be placed on the market unless a HACCP plan has been completed and there is evidence that the product is safe and has been assigned a safe shelf life
• Therefore, all ready to eat products not for special medical purposes and for which Listeria monocytogenes (Lm) are specified in law (assimilated Regulation (EC) 2073/2005) should be categorised as 1.3 OR 1.2a Food Safety Criteria being applicable
• Ongoing results from validations, monitoring and verification checks (including microbiological results) must be collated, trended and routinely reviewed.  These results over time build to form ‘historical data’ to demonstrate compliance with assimilated Regulation (EC) 2073/2005
• Any non-conformances or adverse tends must be actioned effectively and verified in a timely manner
• All data must be collated to support the safety of the product
• Qualitative results are expressed as ‘not detected’ (ND) or ‘detected’ in 25g
• Quantitative results are expressed as cfu/g, with the lowest sensitivity being 10cfu/g,  with the lowest sensitivity being 10cfu/g
• Unsafe product must be withdrawn from the market and stakeholders informed.
