STEM Club Activity: Investigating Milk
In this hands-on STEM Club activity, students explore the different food groups and nutrition categories by investigating the macro-nutrients present in samples of milk. Using microscale techniques, students conduct a series of food tests to determine the presence of proteins, fats, and carbohydrates in milk.
By working with small quantities of milk, students can safely perform tests such as the Biuret test for proteins and using iodine solution to test for starch. This allows students to directly observe the scientific process in action while gaining a deeper understanding of food science and nutrition. Interestingly, lactose is also a reducing sugar and therefore would produce a positive test with Benedict's solution, however, many GCSE specs denote this being a test for glucose only.
The resources for this activity, developed by Sam Holyman, STEM teacher at Aylesford School, offer clear instructions for performing the tests, along with suggestions for further analysis and group discussion. These resources are designed to help students learn about the role of macro-nutrients in a balanced diet, as well as the importance of food science in our daily lives. The resources are available for download and provide everything needed for a successful and engaging session.
